It will now be run by Riverside Limited - who already run the Sound Café and Bradda Glen.
More than 30 operators expressed interest to take over the facility, which has been closed since March 2020.
Riverside wants to make significant changes - including new equipment and furniture to seat 100 people.
Officials say the cafe will be open from Thursday, July 17, but the new changes aren't expected to be made until September.
